Apple Cake

Ingerdients

  • 1/2 cup (113g) butter, softened

  • 1 cup (200g) sugar

  • 1/2 cup (107g) brown sugar

  • 1/2 tsp vanilla extract

  • 2 large eggs, room temperature

  • 2 cups (240g) all-purpose flour

  • 1 1/2 tsp ground cinnamon

  • 1 tsp ground nutmeg

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 6 cups peeled and chopped apples (tart are best)


Instructions

  1. Grease a 13x9 baking dish. Preheat oven to 350º F.

  2. In bowl of electric mixer with paddle attachment, cream butter, sugar and vanilla on medium high for 3-5 minutes until light and fluffy. Add eggs and beat until well combined.

  3. In medium bowl whisk together flour, cinnamon, nutmeg, salt and baking soda. Gradually add flour mixture to creamed mixture and mix well, matter will be stiff. Stir in apples until well combined.

  4. Spread mixture into prepared baking pan and bake for 40-45 minutes until top is lightly browned and springs back with lightly touched.

  5. Let sit for 30 minutes before cutting. Serve with ice cream. Alternatively top with buttercream or cream cheese frosting. Make sure to let cake cool completely before topping with frosting.
