This recipe came from America's Test Kitchen so it's a little creative. You will be a lot faster the second time!
To speed this recipe up, I form the sausage and measure out the dry ingredients ahead of time. Use the same 8-inch square pan to form sausage and bake the biscuits so everything fits together nicely.
Ingredients
Biscuits
1 2/3 cups (200g) all-purpose flour
1 1/2 tsp sugar
1 1/4 tsp baking powder
1/4 tsp baking soda
1 tsp salt
5 tbsp butter, melted & cooled slightly
1 cup (227g) buttermilk, shaken & chilled
Filling
1 lb breakfast sausage
6 eggs, divided
4 slices America cheese
Instructions
A day or so head form the sausage patties. Line the 8-inch metal pan with plastic wrap, edges hanging over the pan. Press sausage into a single flat layer in the metal pan. Score the sheet of sausage using a metal bench scraper: first score down the middle, then turn pan 90° and make two equal parallel cuts, resulting in six rectangles. Fold flaps of plastic wrap over the sausage and freeze. Once sausage is frozen you will be able to break the six pieces apart to either cook right away or wrap them up again with plastic wrap or wax paper in between the sausage pieces (so they don't stick together) and freeze or refrigerate until ready to use.
Biscuits
Adjust oven rake to middle position and preheat oven to 425°. Grease 8-inch square metal baking pan.
In medium bowl, whisk dry ingrediets together. In a separate bowl measure out the buttermilk and then stir in melted butter, small clumps will form. Add buttermilk mixture to dry ingredients and stir until fully combined.
Transfer dough to greased 8-inch square metal baking pan. Either spray your fingers with cooking spray or wet them with water so dough doesn't stick as you pat dough into an even layer and into corners of pan. Give the pan a spin on the counter spread the dough out.
Spray the metal bench cutter with cooking spray and score the biscuit dough: first score down the middle, then turn pan 90° and make two equal parallel cuts, resulting in six rectangles (scoring the biscuits before baking makes it easier for them to seperate once cooked). Bake biscuits until golden brown, about 20 minutes. Let biscuits cool in pan for a few minutes, then transfer to wire rack and let cool for about five minutes. Use a serrated knife to separate biscuits into six portions and then gently slice biscuits in half, top from bottom.
Sausage
While biscuits are in the oven cook the six sausage patties in an air fryer at 350° for about 10 minutes, until cooked through. Once cooked, remove sausage patties from air fryer and place on paper towels to absorb excess grease.
Eggs
Heat 12-inch nonstick skillet over medium heat. In small bowl, beat three eggs with a pinch of salt. Spray skillet with non-stick spray and add eggs to pan, tilting pan so eggs form an even circle on bottom of the pan but not up the sides. Reduce heat to low, and cover pan for about one minute until eggs are set and no longer runny. Turn off heat. Run spatula around the edges of eggs to loosen from pan. Fold the 4 sides of the eggs toward the middle to create a large square (about 8-inch). Then fold the square in half to create a rectangle (about 8x4-inch). Place two slices of cheeese on top of egg rectangle. Place lid on pan to melt the cheese, about a minute. Once cheese is melted cut the egg rectangle into thirds and place one third on bottom of biscuit, followed by a piece of sausage and then top of biscuit. You will need to repeat making the second batch of three eggs for remaining three biscuits.
