These chocolate cookies are thick and soft & gooey on the inside. Yummy!
(yield: about 18)
Ingredients
1/2 cup (1 stick) butter (room temperature)
3/4 cup (160g) brown sugar
1/4 cup (50g) white sugar
1 egg
1 tsp vanilla extract
2 cups (240g) all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 cup chocolate chips
Instructions
Line 2 large baking sheets with parchment paper.
Using electric mixer, with paddle attachment, cream together butter and sugars until light and fluffy. Add egg and vanilla, mix until combined.
Add flour, baking powder & salt. Mix until combined. Add chocolate chips and gently mix by hand to keep the dough light & airy.
Using a cookie scoop or spoon (about 2 tbsp in size) scoop cookies to prepared pans. Chill the cookie dough at least 30 minutes.
Preheat oven to 375ºF and bake cookies for 15 minutes, until edges are set. Let cookies cool on baking sheet for 5 minutes, then transfer to wire cooling rack.
