Coleslaw

(serves 8)

  • 1 small head purple cabbage

  • 1 small head green cabbage

  • 1 cup mayonnaise

  • 2 tbsp sour cream

  • 2 tbsp rice wine vinegar

  • 2 tbsp sugar

  • 2 tsp celery seed

  • 1 tsp salt

  • 1/2 tsp pepper


Instructions

  1. Thinly slice, then chop cabbage and place in large bowl.

  2. In medium mixing bowl, whisk together mayonnaise, sour cream, rice wine vinegar, sugar, celery seed, salt and pepper. Taste the dressing, it may need more vinegar if it's too thick. Also add more sugar, salt or pepper as desired.

  3. Pour dressing over cabbage and mix thoroughly. Refrigerate for a few hours before serving to allow the flavors to enhance.
