Ingredients
2 cups cranberry juice
1/2 cup agave syrup or honey
1/4 cup packed fresh mint leaves, plus more for garnish
2 1/2 cups white rum (Cruzan Aged Light Rum)
1/2 cup fresh lime juice
1/2 cup fresh or frozen cranberries
1 cup sparkling water
Instructions
In medium saucepan over medium heat, combine cranberry juice, agave (or honey) and mint until it comes to just a light boil.
Stir to combine then cover and steep until cranberry juice tastes like mint, about 3 to 5 minutes. If not sweet enough for your liking, add more syrup. Remove mint and pour liquid into a pitcher.
Stir rum and lime juice into pitcher and refrigerate until cold.
To serve, add 3 to 4 mint leaves, a few cranberries and ice to lowball or wine glass. Pour chilled drink into glass, then top off with a splash of sparkling water. Cheers & enjoy!
