These biscuits are from America's Test Kitchen and are called 'Dream Biscuits' because they are a combination of cream and drop biscuits. They are very easy to make and come together quickly.

Ingredients
3 cups (360g) all-purpose flour
4 tsp (17g) sugar
1 tbsp (12g) baking powder
1 1/4 tsp salt
2 cups (454g) heavy cream
2 tbsp butter, melted (optional, to brush on top of finished biscuits)
Instructions
Adjust oven rack to upper-middle position and preheat oven to 450ºF. Line rimmed baking sheet with parchment paper.
In medium mixing bowl, whisk together flour, sugar, baking powder, baking soda & salt.
Microwave cream until it is 95º to 100ºF, using internal thermometer (about 60 to 90 seconds, stirring halfway through microwaving). Stir cream into flour mixture until dough forms. Don't worry about mixing it too much.
Spray a 1/3 cup measuring cup with vegetable spray. Drop level scoops of batter 2-inches apart onto prepared sheet pan. Biscuits will be about 2 1/2 inches wide and 1 1/4 inches tall. You can use your fingers to gently reshape them if needed before placing in oven. Respray measuring cup every 3 or 4 scoops so the dough doesn't stick.
Bake for 10 to 12 minutes, until tops are light golden brown, rotating pan halfway through baking.
Brush hot biscuits with melted butter, if using. Serve warm.
