Easy to make waffles, with ingredients you already have in the kitchen. I like to double this recipe and freeze the leftovers for quick during the week breakfasts. Wrap each waffle in parchment paper and then freeze in plastic freezer bag.
(Yield: about 6 waffles)
Ingredients
2 cups all purpose-flour
1 tsp salt
4 tsp baking powder
2 tbsp white sugar
2 eggs
1 1/2 cups warm milk
1/3 cup butter, melted
1 tsp vanilla extract
Instructions
Preheat waffle iron to desired temperature.
In a large bowl mix together flour, salt, baking powder & sugar. Use a separate medium-sized bowl or large measuring cup to mix the wet ingredients. Beat the eggs, stir in the milk, butter & vanilla. Pour liquid mixture into dry ingredients, using spatula mix until well blended.
I like using a large cookie scoop to ladle batter into waffle iron (my waffle iron holds about 2 1/2 scoops of batter per waffle). Cook waffles until golden and crisp. Serve and enjoy!
